Bourbon BBQ Pulled Chicken Sandwiches and Green Apple Slaw

The other day I was looking for more ways to use the TON of chicken that I have in my freezer and I just happened across Rachael Ray and 30 Minute Meals. This recipe is easy to make and my whole family LOVED it! Unfortunately, I don’t have a picture because they disappeared so fast!

Ingredients

Chicken:

  • 2 small skin-on, bone-in chicken breasts
  • 2 skin-on, bone-in chicken thighs
  • 2 bay leaves
  • 1 small carrot, coarsely chopped
  • 1 small onion, quartered
  • 1/2 orange, sliced
  • Salt

BBQ Sauce:

  • 1 cup organic ketchup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons dark brown sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon coarsely ground pepper
  • 2 shots of bourbon
  • 2 large cloves garlic, finely chopped
  • Juice of 1/2 orange

Slaw:

  • 1/3 cup vegetable oil or olive oil
  • 3 tablespoons cider vinegar
  • 1 tablespoon superfine sugar
  • About 1 1/2 teaspoons sea salt or kosher salt
  • Juice of 1 lemon
  • 1/2 red onion, grated
  • Salt and freshly ground pepper
  • 1/2 pound cabbage (red, green or a mix), shredded
  • 1 large green apple, peeled and coarsely grated

 

  • Brioche rolls, split
  • Bread-and-butter pickles, for topping

Directions

For the chicken: Place the chicken breasts and thighs in a pot with the bay leaves, carrot, onion, orange and some salt. Cover with water, then cover the pot and bring to a boil. Reduce the heat and cook at a low rolling boil for 20 minutes. Remove the chicken to a cutting board. Strain the broth, then return to the pot and boil for a few minutes to reduce it slightly. Remove the skin and bones from the chicken and shred the meat.

For the BBQ sauce: Meanwhile, combine the ketchup, mustard, brown sugar, maple syrup, vinegar, Worcestershire sauce, pepper, bourbon, garlic and orange juice in a small pot. Simmer over medium-low heat, stirring occasionally, about 20 minutes.

For the slaw: Whisk together the oil, vinegar, sugar, salt, lemon juice and onions. Season with salt and some pepper. Add the cabbage and apples and toss to combine.

Add 1 cup poaching liquid to the BBQ sauce, then add the chicken, stirring and shredding it with 2 forks. Pile the chicken on the rolls and top with pickles and slaw.

That Frumpy Feeling

It’s the time of year when days get shorter, temps get colder and the warm clothes come out of hiding.

Big sweatshirts, bulky sweaters – you know what I mean. I love this time of year with the beautiful fall colors and sunny, albeit crisp, days.

What I don’t love is the way the clothes make me feel. FRUMPY! I’m a short (5’5″) curvy girl and bulky is not a good look.

I need to shop for new pieces but don’t have much in the way of disposable income to buy a new wardrobe. I’m a stay-at-home mom trying to build an online business and don’t have alot of reasons to leave the house.

I’ve found that, even when wearing my frumpy clothes around the house, I feel better when I’ve done a little thing for myself – put on makeup. I smile when I catch a glimpse in the mirror and it changes my whole attitude.

Good Twin, Bad Twin

I’m a Gemini. Until recently, I never thought I fit the Gemini stereotype. I’m a fairly even tempered person and didn’t feel like I had two different sides. Then I had an epiphany…it’s not so much good and bad as logical and emotional.

They’re almost as opposite to me as good and bad. We certainly need both, but they should work together, in harmony, instead of one taking over and shoving the other out of the way.

Some days only logic comes out to play – then there’s not a whole lot of play, just business. Get the laundry, dishes, vacuuming, cooking, computer work and running around done. Those days aren’t very fun, but I sure get alot done – and feel pretty good about the accomplishments!

On the days that emotion comes out, I don’t get ANYTHING done. I surf the web, watch TV, go window shopping and daydream about what I’d do if I had a really successful business.

Somehow I need to find a way for these two to work together – that’s when I’ll have my successful business and have fun doing it!
